Low-Fat Alfredo Sauce

You will need the following ingredients for this recipe: one tbsp. butter, two minced cloves of garlic, one tbsp. all-purpose flour, one and one-third cups of low-fat milk, one and one-fourth cups of grated Parmesan cheese, two tbsp. low-fat cream cheese, two tsp. chopped parsley and coarsely-ground black pepper.

Place sauce pan on medium heat. Cook butter and garlic for about a minute. Slowly put in flour while stirring. Add milk slowly and whisk until the mixture starts to thicken. Put in one cup of grated Parmesan cheese, cream cheese and salt.

Constantly stir until all ingredients are well-blended together. Cook until it starts to simmer and then turn off heat. Let stand for a few minutes to get a thicker sauce. Pour on pasta and serve.

Easy-to-Make Light Alfredo Sauce

This recipe takes about twenty-five minutes to prepare and cook.

You will need: one tablespoon extra virgin olive oil, four cloves of garlic, minced; two cups of skim milk, one cup of chicken broth, three tablespoons all-purpose flour, one-half cup of grated Parmesan cheese, salt and pepper to taste.

Place your pan over medium heat and pour in the extra virgin olive oil. Stir in garlic until you get a light brown color.

On another sauce pan, pour in milk and chicken broth. Gradually add flour and cook on medium low heat. Add salt and pepper according to your taste while constantly stirring. Add the sautéed garlic. Continually stir until the sauce thickens and then add the Parmesan cheese.

Stir just until the cheese has melted and then turn off heat. Let the sauce stand for a few minutes to allow it to thicken a bit more. Pour over your preferred pasta and serve.

This recipe is good for eight servings. You may also add mushrooms, shrimps or chicken to your white sauce. For the chicken broth, you may replace this with vegetable broth if you prefer.

Also, you may lessen the garlic cloves if you do not wish to have a strong garlic flavor to your sauce.
