The Chicken Alfredo Recipe and the Alfredo Sauce
The alfredo sauce was popularized by Italian restaurateur by the name of Alfredo di Lelio. The visual palette teaser of this recipe is the melting cheese that will eventually emulsify. It creates a rich and smooth coating and makes the entire dish tantalizing both to the eyes and the tastebuds. The chicken alfredo recipe is the American variant of the original. Other variants of this dish would use ingredients such as shrimp and broccoli.

The chicken alfredo recipe below will require an average amount of preparation. It will require a minimum of 15 minutes to cook. However, it may require as much as a full hour to cook the chicken. This recipe creates up to four servings. Take note that you may vary the taste of this recipe simply by how you cook it and by the way you cook the chicken.
There are a variety of ways for you to cook the chicken. The way you choose to cook it will definitely affect your cooking time and the flavor of this chicken alfredo recipe. You can have it grilled, sautéed, or cut into bite sized morsels. Other than that, you may even opt to sprinkle the chicken with cheese and finishing the dish off in your oven.
As an optional ingredient of this recipe, you may even add either dried or cooked red pepper. Pasta options include farfalle, mostaccioli, taglietelle, and fettuccine. Remember to cook the chicken first before dealing with the pasta.
Ingredients
Grated nutmeg (1 pinch)
Salt
Fresh ground pepper
1 1/4 cup mixture of light and heavy cream
1 cup freshly grated Parmesan
4 tablespoons unsalted butter
8 oz of any pasta of your choice (farfalle, mostaccioli, taglietelle, or fettuccine)
3 sage leaves
2 skinless chicken breasts cut into quarter inch slices/bite size morsels
(optional ingredient) 1 seeded red pepper
Procedure to Cook This Chicken Alfredo Recipe
Fill a pasta pot with water (you may use any pan or pot that is large enough to hold enough water to boil your pasta).
Set the pasta water to a boil.
Sauté the chicken breasts using 2 tablespoons of butter (or olive oil if you prefer). Sauté the pieces of chicken until they are lightly browned. Once cooked, set the chicken aside.
Cook the pasta. Set some of the pasta water aside when the pasta is done. This will be used to moisten the chicken in case it gets too dry.
Using the same pan you used to cook the chicken, cook the following ingredients over medium heat: 1/2 cup Parmesan cheese, 1 tablespoons butter, and cream. Keep stirring until all this mixture thickens slightly.
Add pepper, salt, sage leaves, and nutmeg
Add the cooked chicken. You may also add optional ingredients at this point. In case the dish gets too dry, add some pasta water.
Add well drained pasta to the sauce.
Turn the mixture into a serving bowl. Another option is to turn the mixture into a baking dish and sprinkle with Parmesan on top and set it in a broiler for half a minute then serve.
